I love working with Taro Root. Its makes everything taste more buttery and it acts like a natural baking binder.
Our household is always looking for new toddler friendly recipes. Our 3 year old appreciates any food he can pick up and easily munch on. Here is a recipe that is health, sugar free, and tastes great!
Recipe:
Makes approximately 12
3 taro roots, peeled and mashed
1/2 cup raisins
1/2 cup walnuts, chopped
* 1/2 cup date purée (see recipe below)
1 banana, peeled and mashed
1/2 tsp cardamom
1/2 tsp cinnamon
1/2 cup Bob’s Red Mill flaxseed meal
1/4 tsp Bob’s Red Mill xanthan gum
Preheat oven on 350 F.
*Date puree:
In a mixing bowl, soak 30 medjool pitted dates in approximately 1 cup warm water for at least 10 minutes. Add 3 Tablespoons Good Karma Flaxmilk or your preferred non-dairy milk. Food process until pureed.
Combine all ingredients in a large mixing bowl. Place mix in greased muffin tin or pan. Bake for 25minutes. Remove muffins from pan and enjoy.
