naan, samosas, and crepes Oh my! -dairy free, gluten free

 

I am always searching for ways to increase my son’s adventures is palette even more.

Mother always said you have to try something once before you say you don’t like it.

 

 

 

We began making more Indian food recipes in the house when the 2020 Coronavirus pandemic hit the world as these recipes tend to be satisfying and full of flavor. You can also extend the life of tough to purchase meat in this cuisine.

Since every toddler loves anything starchy, I took a chance at making naan bread or what we call “pan de naan.”

Fortunately he loved it and I found myself bargaining for coconut milk while shopping online during the pandemic!

We discovered you can make Indian naan, tacos, burritos, French crepes, and of course Indian samosas with the naan recipe right at your finger tips.

 

Naan recipe:


Makes approximately 10 pieces


2 Tablespoons Bobs Red Mill flaxseed meal 

1 cup almond flour

1 cup tapoica flour

2 cups coconut milk, canned and full fat ( If run out of coconut milk use Good Karma flaxmilk or another unsweetened non dairy milk)

2 teaspoons salt

 

Samosa additional ingredients:

Approximately 1 Tablespoon of your favorite cooked filling mixture such as minced ham and softened goat cheese

 

Crepe additional ingredients:

1 teaspoon chopped strawberries or blueberries

1 teaspoon chopped goat cheese

 

Pre–heat at least a 10inch nonstick frying pan on medium heat. If the bread begins to burn too much, lower the heat a bit.

Mix all the ingredients together in a bowl, and pour 1/3 cup of batter onto the pan. Allow the batter to spread out gradually on its own.
After 1 minute and 15 seconds, or once the batter fluffs up and looks firm and somewhat cooked, flip it over to cook the other side for another 1 minute and 15 seconds. As you cook them, the final naan the will begin to look better. The first one is always the ugliest.

Play around with the temperature, slighter higher or lower, as needed, depending on if the batter is cooking well.

Allow to cool and serve warm. Enjoy a la carte. You can create a taco with it and stuff it with your favorite stuffing.

 

 

Samosas Recipe:

Combine the above ingredients from the Naan Recipe. Preheat oven to 350F and prepare greased baking sheet.

Into a large nonstick frying pan pour 1/2 cup of the batter and cook until the bottom firms slightly, then remove and place on a baking sheet.

Cut the naan pancake in half and spoon approximately 1 Tablespoon of your favorite cooked filling mixture on 1/2 of each piece.

Fold the other side of bread over the filling and pinch them closed. It will look like an empanada. Continue until all batter is used up.

Place greased baking sheet in oven and bake for 30-40 minutes or until crispy outside.

 

French style crepes Recipe:

Follow the instructions for the Naan Recipe. Cook for 1 1/2 minutes on the first side. Quickly add favorite toppings such as 1 teaspoon chopped strawberries and 1 teaspoon chopped goat cheese.

Flip over one half of the naan to close and press to seal. Cook for 30 seconds. Flip and cook for another 30 seconds.

Allow to cool a bit, then serve warm.
