Lavender Macadamia Nut or Berry Pancakes -gluten free , dairy free, soy free (can be used for a waffle iron also)

Who doesn’t love waffles or pancakes in the morning?

Especially when they are in the shape of Mickey Mouse or trains!

 Recipe:

2 cups gluten Free all-purpose baking flour (can mix different types such as ½ coconut flour, ½ flaxseed meal, etc) ** if the flour doesn’t have xanthan gum, add ¼ tsp xanthan gum

1-2 banana, mashed

2 ½ tsps. baking powder

½ tsp salt (preferably with iodine)

2 eggs

1 ½ cup Good Karma Flaxmilk or a non-dairy milk

2 Tbsps. vegetable oil

 Optional ½ cup berries OR ¼ cup unsweetened applesauce, ¼ cup macadamia nuts crushed, plus 1 tsp lavender  

 

Stir together all dry ingredients and then add and incorporate all wet ingredients. If the batter seems too thick to pour, add a little more milk.

Grease a nonstick skillet with vegetable oil and place over medium heat. Using a ¼-cup dry measuring cup, portion batter into pan.

Cook until bubbly, a little dry around the edges, and lightly browned on the bottom. Flip pancakes and continue to cook until second side is golden brown.

Serve hot with maple syrup and a side of yogurt.

 

 

 *If making waffles, fill the mold of the waffle iron and close. Allow to cook for approximately 5 minutes on the waffle iron. Remove carefully and allow to cool.

**What is xanthan gum? Gluten free flour doesn’t have the binding power of gluten so it needs a “glue” such as xanthan or guar gum.
