Looking for the perfect low-calorie dessert to serve for Labor Day?
The ingredients are simple to buy at the supermarket, in season so its perfectly sweet, and low calorie too!
When my family and I moved to Austin, Texas, we would eat watermelon all afternoon since it was super inexpensive and super sweet. I thought, there has to be a way we can enjoy this amazing fruit without having to add avocado or eat it plain all of the time.

Recipe:
Makes approximately 8-10 servings

2 cups watermelon or pineapple, peeled and diced

Juice of a whole lime

1 Teaspoon agave
Optional: chocolate shell for popsicles
Gelato:
Place watermelon in a plastic container (not a plastic resealable bag) and place in freezer overnight or at least 12 hours.
Place frozen watermelon in food processor. Process until mashed. Add lime juice, agave, and non-dairy milk. Food process more until you get a sorbet type texture.
Serve immediately with fresh fruit in serving bowls, like you would ice cream. Pairs great with your favorite chilled white wine. Freeze any leftovers.
Popsicles:
Place all ingredients in food processor until combined and pureed. Pour into silicon popsicle molds. Allow to freeze and solidify for at least 6 hours.
Remove from mold and cover with chocolate shell on 3 sides then place on plate on uncovered side to solidify in refrigerator for 60 seconds. If you need to soften chocolate ganache for shell, place in microwave for 10-20 seconds. Remove and cover 4th side with chocolate shell and place on plate on solidify chocolate side to solidify the 4th side in refrigerator for 60 seconds.
Enjoy as it will melt over 76F degrees!
