BBQ Food! Broiled Yellow and Green Zucchini Recipe


Summer time has you eating squash constantly since its super inexpensive at the supermarket and it just tastes super delicious with any summertime BBQ!


We just left the East Coast from a family reunion and I had the idea of creating my own simple recipe for those of us who don’t own a barbecue yet.


1 Tablespoon safflower oil
1 Tablespoon olive oil
Salt and fresh ground black pepper to taste
1 medium green zucchini, thinly sliced (approximately 1/4 inch thickness)
1 medium yellow zucchini, thinly sliced (approximately 1/4 inch thickness)

Preheat oven on Broil High. Mix oils in baking pan to grease. Place both green and yellow zucchini slices on pan. Sprinkle slices with salt and pepper and a little more oil if desired.

Broil for 15 minutes. Allow to cool slightly, but enjoy hot as a side with any meat or fish dish.
