Baked parsnips-health non nightshade french fry alternative, gluten free, vegan

 

What do you do with parsnip and how can you make them fun to eat?

 

 

Most people, especially toddlers, thoroughly enjoy french fries or anything similar. Some of us, like myself cannot eat nightshades or many of them. Yes, the plain old potato that we all consider a staple food, is a nightshade. How can I enjoy potatoes without always having to resort to sweet potatoes?

Bakes parsnips are surprising delicious if you give them a try!

 

Recipe:

2 1/2 lbs raw parsnips, cut into 1 inch chunks

4 medium garlic cloves, minced (recommend food processor)

Juice of 1 lime

2/3 cup olive oil

Salt and pepper to taste

 

Preheat oven on 450F.

In a large mixing bowl, place parsnips, garlic, olive oil, lemon juice, salt and pepper. Toss to coat.

Place seasoned parsnips on a greased baking sheet. Bake for approximately 20- 25 minutes or until you can puncture a fork easily through a few pieces. Enjoy warm a la carte or a top a salad.

 

 

How to pick out the best parsnip at the market:

Pick out small to medium sized parsnips. Bigger ones have tough cores that don’t cook as thoroughly.
