Baked avocado sticks-gluten free, vegan

 

When you are bored of guacamole but still crave your avocado, look to the oven to help you spice things up a bit! Avocado, the internationally loved Superfood

 

Recipe:

Makes approximately 24 slices

3 Large avocados, peeled, sliced lengthwise approximately 1 inch in thickness

Juice of 1 lime 

Salt and fresh ground pepper to taste

1/4 cup flour, 1/4 cup if necessary

1 egg lightly beaten, 1 more if necessary

1 1/2 cups Bob’s Red Mill gluten free all purpose flour

2 tablespoons olive oil

 

Pre-heat oven to 400F. Pour 1 tablespoon oil in sheet tray or baking dish; set aside. Place egg in small bowl and whisk. Squeeze fresh lime juice in to egg bowl and season with salt, pepper to taste. Stir to combine. Place flour on plate.

Form an assembly line: Dip each slice avocado in egg mix, then coat in flour. Be sure the avocado slices are coated very well in the flour.

Repeat until all slices are covered. If you need to create more egg mixture and use more flour, do so.

Place in a single layer on the greased sheet pan. Drizzle with the remaining oil. This will help the avocado slices crisp in the oven.

Bake for 15 minutes or until the avocados are golden and crispy. 

 

Enjoy a la carte or a top a quinoa bowl or with your salad.
