Apple Snack bites - gluten free, dairy free

 

We were invited to a friend’s home for family Halloween and we needed to bring a snack for everyone to enjoy. I had this recipe in my mind and thought it would be perfect to complement the tons of candy at the party from Trick or Treating!

Although every guest enjoyed it for dessert, they also kept a piece and saved it for breakfast the next day!

 

 

 

Recipe:

1/2 cup safflower or vegetable oil

1/2 cup dates, pitted, pureed in food processor

1/2 cup light brown sugar

2 teaspoons vanilla extract

1 egg

1 egg yolk

3 tablespoons Good Karma Flaxmilk or non dairy milk

2 medium apples, cored, pealed, and mashed in food processor

1 cup plus 2 tablespoons Bob’s Red Mill Gluten Free All Purpose Baking Flour

1/4 teaspoon salt

1 teaspoon baking powder

1/4 teaspoon baking soda

3/4 teaspoon ground cinnamon

 

Preheat the oven to 350F. Spray an 8x8x2-inch no stick cake pan with cooking spray.

In a large bowl, mix together the oil, dates, sugar, and vanilla. Add the egg, and then the yolk, whisking after each. Add the milk and apples.

In a medium bowl, place flour, salt, baking powder, baking soda, and cinnamon. Mix and combine.

Transfer the mix to cake pan and place in oven. Bake for 35 to 40 minutes, rotating the pan after 20 minutes. Bring to room temperature, cut into 1 -2 inch squares, and enjoy.
