Turmeric Almond Encrusted Cod Recipe

 

I had some cod in the freezer and needed to use it as we were trying to clean out the house prior to moving. This is what I created! This type of fish is priced not too high and not too low. Looking to take what could be a boring, bland fish, into an amazing meal?

 

 

Makes approximately 4 servings


1 lb cod, filetes

½ cup almond flour

1 tsp dried thyme

½ tsp ground turmeric

Salt and ground Pepper to taste

1 egg, whisked

1 1/2 Tbsp olive oil

Optional: Juice of 1/2 lime




Mix flour and spices together to combine in mixing bowl. Combine 1 Tablespoon oil and egg in a separate bowl.

Dip cod pieces in egg then in flour mix. Coat well.

Cook in non stick stovetop pan with remaining oil on medium heat until golden brown on each side and fish is cooked through.


Pair with Chilean Inspired Guacamole and warm corn tortillas for taco night!

Or just sprinkle with lime juice.
