The Blue in red, white and blue: blackberry cupcakes, gluten free

 

What to make to celebrate the USA and its Independence Day on the 4th of July?

Since we were having a family party and everyone expects the formal event planner to have festive food and decor, I had to create the United States of America flag with cupcakes.

Here was my effort at making the blue strips!

Make an American Flag with fun to eat food. Creativity at its yummiest!

 

Recipe:

Makes approximately 12 cupcakes or approximately 36 mini cupcakes

  • 1 3/4 cup Bob’s Red Mill All Purpose gluten free flour

  • 1/4 cup coconut sprinkles

  • 1/2 cup brown sugar

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 banana, peeled and mashed (recommend using the food processor to mash

  • 1/2 cup coconut oil

  • 1/2 cup blackberry preserves

  • 2 tablespoons plain yogurt

  • 2 eggs

  • 1/4 teaspoon xanthan gum

  • 12-36 fresh blackberries

 

Preheat oven at 375F. Grease cupcake pan or muffin tin.

In a large mixing bowl, combine and mix baking soda, baking powder, and flour together.

In a separate bowl, combine and mix together the eggs, coconut flakes, brown sugar, yogurt, and blackberry preserves.

Combine the dry mixture with the sugar mixture. Add in the banana and coconut oil. Combine and mix. Pour batter into cupcake pan until each cup is approximately 3/4 full. Bake for 15-20 minutes. Remove from oven and top with fresh blackberries by lightly pushing them into the batter so they stick.

Allow to cool. Remove from pan. Enjoy.
