In 2000, Easter was celebrated at home with our immediate family only. I had to think of something special to make for Easter brunch that included items I knew my son and husband would love.
You can enjoy this brunch item on any occasion,
not just Easter!

Recipe:
2 slices thick cut bread lightly toasted
1 tablespoon butter
1/2 cup shredded smoked gouda goat cheese or softened chevre crumbled goat cheese
4-6 slices thick cut bacon cooked
1 apple thinly sliced, we prefer Fuji
Local honey to taste
Himalayan pink sea salt to taste
Preheat oven on Broil High.
Spread your lightly toasted bread with butter and top with cheese, add the bacon and then the apple slices. Place on a baking sheet and place under the broiler for 1-2 minutes or until the cheese has melted. Make sure you don’t burn the toast.
Remove from the oven and sprinkle with salt and drizzle with honey. Enjoy!
