We were asked to bring something healthy to school for all of the students to share for Valentine’s Day. In my mind, it needs to red and fun to eat for toddlers, of course. Rhys and I decided to make a derivation of my Cheesy Apple Nut Clusters (found in my cookbook for purchase).

Did you know that this originally Central Asia fruit is not a Forbidden Fruit, but a SUPER FRUIT! It’s a great source of fiber, decreases blood glucose levels, lowers cholesterol, and have many other benefits.
Fun fact: there are 7,500 different varieties of apples worldwide. However only 10 are really popular. Fortunately my favorite Fuji apples are on the list!
I guess when the saying, “an apple a day, keeps the doctor away,” does ring true, as long as you add all of the other super foods along with it.
Recipe:
Makes approximately 12 clusters
1/2 cup Bob’s Red Mill gluten free all-purpose baking flour
1/4 cup Bob’s Red Mill flaxseed meal
1/2 tablespoon ground cinnamon
1 medium apple, cored and finely chopped
1/2 teaspoon salt
2 tablespoons salted butter, melted
1 egg
1/2 cup Good Karma Flaxmilk or non-dairy milk
1 teaspoon honey
1/2 cup unsweetened apple sauce
optional: 1/4 cup walnut, crushed (recommend using food processor)
Preheat oven 350F.
Grease oven tins or pan with nonstick cooking spray. Mix ingredients in large bowl. Divide batter among muffins tins evenly. Bake for 30 minutes,
Allow to cool prior to removing from cups or pan.
