Albondigas (meatballs)-gluten free, dairy free

 

When you have a toddler that loves his ground beef but you dont want him to get bored with just preparing hamburgers or sliders continuously, you need to think outside the box!

A mother also has to consider making items that are easy to eat and pick up.

Recipe: 

  • 1 pound ground beef

  • 1 finely chopped shallot or half a white onion

  • 2 medium garlic cloves, minced

  • 1 egg slightly beaten

  • ½ cup finely chopped parsley, basil, tarragon, oregano 

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cinnamon

  • 1/3 cup gluten-free panko bread or potato crumbs OR gluten free bread crumbs

  • Salt and freshly ground pepper to taste

  • Approximately 4 Tablespoons safflower oil

 

In a medium bowl, combine all the meatball ingredients. Use your hands to gently, thoroughly combine.

Using wet hands, form approximately 1-2 tablespoons of the mixture into 26 balls, about 1-1/2 inches in diameter, and place them on a plate. Set aside.

Heat the oil over medium heat in a large skillet. Turn the heat down to lowest setting, cover, and cook through approximately 3 minutes in total. Working in batches to avoid overcrowding and adding more oil if necessary, brown the meatballs, lightly shaking the skillet occasionally to roll the balls and cook all sides Remove the meatballs to a plate.
