Leprechauns need gold coins and nuggets to hide under the rainbow in the enchanted forest. Here is a great way to make that happen. Happy St. Patrick’s Day and do not forget to wear your green or someone may pinch you!
Recipe:
Makes approximately 30
3 cups chocolate chips or discs (the higher the quality chocolate, the better the outcome) We prefer Hu Kitchen dark chocolate gems or Enjoy Life
Optional: Approximately 1/2 cup nut butter
Gold candy foil squares or aluminum foil squares (approximately 4x4 inches)
Mini cupcake pan
In a microwave safe bowl, melt chocolate in microwave for 30 seconds, then stir. Repeat until fully melted.
Line the each cup in the mini cupcake pan with foil.
Spoon fill approximately 1/2 Tablespoon of chocolate into foil. If using nut butter, fill 1/4 tablespoon chocolate, then layer with 1/2 teaspoon nut butter, then layer with remaining 1/4 tablespoon chocolate. Place cupcake pan in refrigerator for 20 minutes or until firm.
Gently remove paper from chocolate with cold hands (my son’s hot hands melted the chocolate), fold and envelope foil around chocolate nugget. Place a sticker on foil is desired.
Gift to others or hide in the leprechaun forest. Keep in refrigerator.
