Who doesn’t like to be brought back to the beach in Mexico or Easter Island ?
These dish will take you there!
This dish is toddler friendly also since its cooked fish.
Recipe:
1 pound halibut
1/4 cup olive oil
Salt and ground pepper to taste
2 medium cloves garlic, toasted
1/2 shallot, toasted
1 cucumber, peeled and chopped finely
1 1/2 avocados
1 1/2 juice lime
1 cup watermelon, no skin, chopped finely
Optional: 2 cups fresh arugula leaves
Sear halibut in a skillet with olive oil, salt and pepper.
To toast shallot and garlic: In a separate skillet, place garlic and shallot on low medium heat until light brown. Approximately 10 minutes.
Flake the fish into 3/4-inch pieces and place in a medium bowl. Add the lime juice, cucumber, watermelon, cilantro, and avocado.
